Frijolito Verde, represents the Lifestyle of Soldimar, an admirable 49-year-old woman who loves athletic sports, and 3 years ago decided to change from a healthy eating style to a totally vegan one. Her first inspiration was her youngest daughter, who by the age of 16 choose to practice a diet free of animal products. The “Plant based” style that conquered this family is based on the belief that we can feed ourselves without having to cause suffering to other species, and without exploiting the planet’s resources in the process of producing food as industrial animal offspring.


Once this philosophy of life is taken for granted, Soldimar introduces us to the pleasant and exciting aspect of her creations. Their day begins at 4 am. She is faithful to her exercise routine that she has had to change, adapting it to her apartment environment given the restrictions she respects during this covid-19 pandemic. Then still very early, she selects the best fruits or vegetables, which will be the protagonists of that day’s menu, to please the orders she has to deliver. Her creations are enjoyed in sweet or savory options. Its pantry contains fragrant spices and ingredients that end up complementing the magic of its recipes.


Before formalizing Green Bean, Soldimar took a course at Chef Mark Reinfield’s Vegan Fusion Academy in Denver. But back in Panama, he has not stopped exploring new recipes adapted to local vegetables and fruits. The search for that daily adventure leads her to the Food Market, to have contact with organic producers, suppliers of sprouted products and a whole increasingly growing and enthusiastic community about the Vegan theme.


Soldimar likes to make uncomplicated, delicious and fun recipes. She is excited about creating vegan versions of quiches, pestos, cheese, dips, arepas, “hot dogs”, tacos. Or the one she considers her “Best Seller”, the chocolate truffles, made from dates, mixed nuts, cocoa and coconut. Her acclaimed “brownies” in the chocolate version or “Blondie” (blond brownies). Their requests satisfy from breakfast cravings, “lunch boxes” to sandwiches for meetings and even birthday cakes.
