Tourism Forum 2026: Innovation, Sustainability, and Strategic Vision for the Future of Tourism in Panama

On September 16, the Sheraton Grand Panama Hotel will host the Tourism Forum 2026, organized by the Panamanian Hotel Association (APATEL). From 8:00 a.m. to 6:00 p.m., business leaders, hoteliers, officials, academics, and national and international specialists will analyze the trends redefining the tourism industry and the opportunities to strengthen Panama’s position as a competitive, sustainable, and innovative destination.

A Day to Start Building the Tourism of Tomorrow

More than just a conference, the forum is designed as a platform for knowledge exchange and the creation of strategic alliances. The program will address key topics such as community-based tourism, the evolving traveler profile, digital transformation, tourism marketing, sustainability, and regenerative tourism, as well as the role of gastronomy and cultural identity as drivers of economic and social development.

The goal is to provide tools and experiences that enable various sector stakeholders to adapt to a constantly evolving market, where innovation and authenticity have become decisive factors in attracting visitors.

Panama’s Gastronomy as a Tourism Differentiator

One of the forum’s key themes will focus on the value of gastronomy as a factor that sets Panama apart as a destination.

Chef Francisco Castro—a renowned culinary entrepreneur, educator, and founder of Mercaito—will share his insights on culinary innovation and the importance of reviving traditional flavors through a contemporary lens. His work has centered on fostering local talent and strengthening Panama’s culinary identity.

Chef Domingo de Obaldia Jr., Culinary Director at El Trapiche, will also participate; he brings 26 years of experience across the hospitality, culinary, and tourism sectors. After building an international career with chains such as Sandals, Hyatt, Starwood Hotels & Resorts, and Disney, he returned to Panama to carry on the legacy of one of the country’s most iconic restaurants. In addition to leading culinary development at El Trapiche, he oversees its public relations and marketing strategies, promoting the preservation of traditional Panamanian cuisine through innovation and the use of native ingredients.

Innovation and Digital Transformation

The agenda also features Mexican expert Engel Fonseca, CEO of Potenttial Group, who will talk about how digital transformation and innovation rooted in neuroscience are revolutionizing the way tourism companies connect with customers and create memorable experiences.

Alongside other experts—including sustainable development specialist Angela Maria Caro, whose work focuses on design, planning, and management—attendees will learn about strategies to boost the sector’s competitiveness and meet the evolving expectations of travelers.

The 2026 Tourism Forum reaffirms the Panamanian Hotel Association’s commitment to developing an industry that is more resilient, inclusive, and sustainable. In a landscape where collaboration and innovation are essential, this event promises to be a must-attend gathering for those dedicated to the growth of tourism in Panama and the region.
