The philosophy of this new restaurant located in David, Chiriqui, comes from the inspiration of its Chef, where everything is done with respect, innovation and feeling good about yourself when cooking. The keys of this restaurant to transmit the love for cooking to each person who visits and tastes its culinary delights.
A Start Filled with Challenges
Alex Rodriguez, is a cook and co-owner of Mezlca. His story started the opposite of what normally happens, since he had no experience or knowledge, both in the kitchen and in the hospitality business. For two and a half years everything was chaos, for this brave entrepreneur, although, both he and his partner (mother) had plenty of desire and enthusiasm. However, Chef Alex Rodriguez decides to do what he should have done from the beginning…educate those desires and have gastronomic resources to solve any adversity.
A Journey Filled with Lessons and Opportunities
This entrepreneur grabbed his backpack and went to cooking school in Seville (Spain), to train as a culinary professional. On weekends he worked in a rice restaurant in a tourist area on the outskirts of that Spanish city. However, the opportunity arose to practice in El Poblet in Valencia, at Chef Quique Dacosta’s restaurant, which had 2 Michelin stars. Alex continues traveling until reaching Marbella City, specifically at the restaurant of renowned Chef Dani Garcia, who had 3 Michelin stars. This journey of great learning and experiences helped Chef Alex make the changes that the restaurant needed.
100% Menu Available at All Hours
At Mezcla if a diner wants to eat almojabanas, carimañola, puff pastry, liver steak at 9 pm, they can order it and enjoy it. Perhaps it will make service a bit challenging, but the strength of this restaurant is in the ability of its team to bring out the dish in time for the customer to enjoy it.
The menu offers typical breakfasts but in versions within Mezcla’s style such as: meat balls in smoked tomato sauce, tail carimañolas with gravy, Shakshuka with smoked jerky, even their rice dishes, pastas, burgers, among other delicacies.
The menu is very varied, they offer daily specials and promotions:
Alfredo pasta (octopus, shrimp, chicken, bacon), grilled lasagna, pasta with meatballs, tail carimañolas, Almojabanos, balls in smoked tomato sauce, Creole sausage, smoked pork, charcoal-grilled meat, sole with nance, pizzas and calzones, basket tacos (pastor, ossobuco, smoked chicken, beef), rice (Guandu morao, beans), patio chicken on the stove, hamburgers, desserts (mom’s gigimbre, tiramisu, coconut flan) and “wraps”.
Daily Promotions
At Mezcla they love to please their guests and cook a wide variety of dishes. For that reason they have promotions and dishes that are off the menu to surprise all diners. Chef Alex has a particular taste for mixing what he learned during those trips, the experiences that inspired him, but always using local ingredients in each culinary creation.
