Chef Edgar Hernandez: “Tourists seek authentic experiences, and Mexican food, due to its cultural roots, offers a unique way to enjoy them”

Mexican food is one of the most popular culinary experiences in Panama and around the world. Its influence on people’s lives when it comes to celebrating and sharing is overwhelming. For this reason, our Guest in our Flavors segment is a Panamanian talent who, at a young age, discovered his passion for cooking while accompanying his mother as a child, who worked as an accountant at a restaurant, where the bustle and aromas captivated him. With studies in gastronomy and with experience in restaurants and hotels, he perfected his art by learning directly from Mexican chefs during a training trip. His style fuses Mexican roots with Caribbean ingredients, and today Chef Edgar Hernandez leads the kitchen at Tacos la Neta restaurants. This time, he shares with The Visitor-El Visitante his vision of Mexican food, as well as its importance to the tourist experience in Panama.

Mexican food is loved all over the world. What do you think sets it apart from other very popular cuisines like Italian, Chinese, American, or Japanese?

“What sets Mexican food apart is its cultural and emotional depth. It’s a cuisine steeped in history, with indigenous, Spanish, African, and Asian roots that have fused in a unique way. The richness of ingredients like corn, chili, beans, and avocado, along with ancient techniques like nixtamal, make Mexican cuisine truly special. Unlike other cuisines that may be more subtle or minimalist, Mexican cuisine is explosive, colorful, and full of nuances. Each dish tells a story and connects with our roots in a very powerful way”.

How does Mexican food from a restaurant like Tacos la Neta contribute to the Panamanian gastronomic experience?

“Tacos la Neta brings authenticity, flavor, and culture to the Panamanian culinary scene. In a country as diverse as Panama, we believe that Mexican cuisine offers a distinct experience, not only because of the ingredients or the recipes, but because of the way we celebrate food. In Panama, where there is already a connection with Mexican culture, these types of events can become very rich tourist and cultural experiences. By celebrating the Day of the Dead with respect, music, and traditional food, we not only share a beautiful tradition, but we also encourage cultural tourism. Tourists seek authentic experiences, and these types of events allow them to learn more about our roots, even outside of Mexico”.

What are the three most popular Mexican dishes at Tacos la Neta among Panamanians and international tourists?

“For Panamanians:

1. Gobernador – A combination that captivates anyone who tries it with its freshness and exuberant flavor.

2. Birria – A blend of juicy cuts of meat with cheese, perfect for those who enjoy intense flavors.

3. Chicharron de Don Ramon – The newest addition to the menu, a balance between traditional and modern.

For international tourists:

1. Cochinita Pibil Tacos – For their authenticity and unique flavor.
