This is because many\nlocal chefs have come together to work towards the same goal. Precisely, thanks\nto the fact that food brings people together around a common goal, Felipe Baker\na Sea Turtle Conservancy Biologist and community activist, Mario Castrellon,\nambassador of Panamanian gastronomy and a group of Ng\u00e4be Bugle women from the community of Rio Ca\u00f1a come together to\ncarry out a project that will help elevate the gastronomic and tourist\nexperience of the sector.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"1334\" height=\"1000\" src=\"https:\/\/www.thevisitorpanama.info\/eng\/wp-content\/uploads\/2022\/05\/Compress_20220525_154246_6588.jpg\" alt=\"\" class=\"wp-image-4336\"\/><figcaption>Felipe Baker and Mario Castrellon<br>Photo: V\u00edctor Miller<\/figcaption><\/figure>\n\n\n\n<p>For this reason, we brought together both outstanding\nprofessionals for an interview that delves into &#8220;Ari Urg\u00fcenrien&#8221;\nwhich in the Ng\u00e4be language means &#8220;Let&#8217;s Cook Together&#8221;, a project\nthat gives a new flavor to Panamanian gastronomic innovation.<\/p>\n\n\n\n<p><strong>What prompted you to carry out this project?<\/strong><\/p>\n\n\n\n<p>Felipe: \u201cOver time many indigenous cultures are\ncompletely forgotten in Latin America and with it the recipe and flavors of our\ngrandmothers. Women play an important role in the Ng\u00e4be-Bugle Comarca because\nthey are in charge of transmitting knowledge to their children, in addition to\nculture, Rio Ca\u00f1a\nand its women are the engine of this project, I decided to call Mario, a\nPanamanian chef who has experience in similar projects and was undoubtedly a\ngood ally to achieve something for women at Rio Ca\u00f1a and their desire to interact with\nprofessionals on the subject and look beyond the ordinary with their local\ningredients. I am an indigenous Ng\u00e4be, a biologist by profession, I currently\nwork for the Sea Turtle Conservancy, a foundation that protects sea turtles\ntogether with local communities, including the Rio Ca\u00f1a community, and being from the\naforementioned community, it is also a kind of personal goal to be able to\ninclude the community, provide them with tools to project and take advantage of\ntourism with respect for nature that imminently grows as the days go by\u201d.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"1500\" height=\"1000\" src=\"https:\/\/www.thevisitorpanama.info\/eng\/wp-content\/uploads\/2022\/05\/Compress_20220525_154322_2584.jpg\" alt=\"\" class=\"wp-image-4337\"\/><figcaption>Photo: V\u00edctor Miller<\/figcaption><\/figure>\n\n\n\n<p><strong>When this project was presented, what made you\naccept it?<\/strong><\/p>\n\n\n\n<p>Mario: \u201cI had not visited the region for a long time,\nI had already had the opportunity before to have supported the region with the\nmost impact in Kankintu and it was something that filled me with energy and\nlife at the time. Which is why when Felipe called me to tell me the story and\npurpose, it was music to my ears.\u201d<\/p>\n\n\n\n<p>&nbsp;<strong>What\npotential do you see in indigenous communities to develop community and\necotourism tourism?<\/strong><\/p>\n\n\n\n<p>Felipe:\u201d Compared to other communities, Ca\u00f1a is small but with very big ambitions and visions. Tourism with harmony and respect for nature is a potential that Rio Ca\u00f1a projects for the green environment and its coastal marine resources that they have preserved and that are increasingly valued for this and for a responsible tourist who wants a special connection with their own nature and knowing better a native culture of the isthmus\u201d.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"1000\" height=\"1500\" src=\"https:\/\/www.thevisitorpanama.info\/eng\/wp-content\/uploads\/2022\/05\/Compress_20220525_154126_6895.jpg\" alt=\"\" class=\"wp-image-4339\"\/><figcaption>Photo: V\u00edctor Miller<\/figcaption><\/figure>\n\n\n\n<p>Mario (in a few words and directly): \u201cThe potential is enormous! There is culture, gastronomy and nature.\u201d<\/p>\n\n\n\n<p>Felipe: \u201cOn&nbsp; Rio Ca\u00f1a are women who are\nvery open to continue learning and rescuing their recipes. United women with a\nvision of improvement to improve services and family income, as well as\nrepresent the local ingredients that die every day as a result of other\nmixtures\u201d.<\/p>\n\n\n\n<p>Mario: \u201cI think I was the one who learned the most!\nHehehe (laughs), but if they managed to leave a seed for them to trust their\nproducts, and that there are also other ways to present and\/or manipulate the\ningredients that they have used all their lives\u201d.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"1500\" height=\"1000\" src=\"https:\/\/www.thevisitorpanama.info\/eng\/wp-content\/uploads\/2022\/05\/Compress_20220525_154039_9229.jpg\" alt=\"\" class=\"wp-image-4340\"\/><figcaption>Photo: V\u00edctor Miller<\/figcaption><\/figure>\n\n\n\n<p><strong>What new dishes did they co-create, what\ningredients do they contain and how will it help to promote the local tourist\noffer?<\/strong><\/p>\n\n\n\n<p>Mario: \u201cThey\ntaught me the Buchu, which is a primitive banana, in the Community consume it\nas a puree, I suggested making a lobster empanada that abounds in its coasts\nand is a product that always attracts attention for any tourist. It is also a\nmore recognizable way of presenting Buchu, which is a native preparation.\u201d<\/p>\n\n\n\n<p><strong>Will you offer any of the new dishes on the Maito\nrestaurant menu?<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Mar\u00edo: \u201cI tried the Dachin and I loved it, they are\nthe shoots of a plant from the otoe family that are fried with a traditional\nsauce and the result is a divine green paste.<\/p>\n\n\n\n<p>I haven&#8217;t been able to get the leaf very often yet,\nbut it&#8217;s sure to be on the list for new tasting dishes in Maito.&#8221;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" loading=\"lazy\" width=\"1334\" height=\"1000\" src=\"https:\/\/www.thevisitorpanama.info\/eng\/wp-content\/uploads\/2022\/05\/Compress_20220525_154201_1521.jpg\" alt=\"\" class=\"wp-image-4341\"\/><figcaption>Photo: V\u00edctor Miller<\/figcaption><\/figure>\n\n\n\n<p><strong>This type of project will be replicated in other\nindigenous communities?<\/strong><\/p>\n\n\n\n<p>Felipe: \u201cThis project hopes to establish itself as a benchmark for other proposals or initiatives that are aimed at rescuing culture, rural tourism, generating new products and, of course, being a model for women&#8217;s participation.
